Perspectives of Students Coming from Turkish-Friendly States on Turkish Desserts in Terms of Flavor

Abstract

Turkish desserts are based on a tradition encompassing a rich cultural heritage and culinary
history. Turkish desserts have developed and diversified through regional and cultural
differences under the influence of different Turkish states established over the centuries.
Considering historical elements and contemporary conditions, examining the taste perceptions of Turkish desserts with Turkey-friendly states will be effective in terms of cultural and historical context. The study aims to examine the perspectives of students from Turkey-friendly countries on Turkish desserts through their taste and flavor experiences. In order to achieve this aim, interviews were conducted with eleven students from Turkey-friendly countries studying in the Gastronomy and Culinary Arts Department of Kütahya Dumlupınar University, Faculty of Applied Sciences. Within the scope of the research purpose, content analysis was conducted using the phenomenological design. The study found deficiencies in the standardization of Turkish desserts, the existence of economic factors in the perception of the quality of the products used in production, and the variety of products used affected the experienced taste. This study may contribute to promoting Turkish desserts in Turkey-friendly countries and research their awareness of taste factors. The findings were compared with the studies in the literature, and suggestions were presented for the sector and academia.
